La investigación se desarrolla en las líneas de:

- Estudio de la actividad antimicrobiana (bacteriocinas) de bacterias lácticas (BAL) en el vino
- Caracterización y estudio de BAL autóctonas para la elaboración de vinos
- Métodos de la Biotecnología para el control microbiológico
- Biodiversidad y biotecnología microbiana
